肉三鲜的制做方法

  原料：猪肉末500克，（最好是前膀肉肥瘦比例7：3）海参丁100克，虾仁100克，炒好熟鸡蛋100克，韭菜末250克，植物油50克，酱油60克，高汤或者水150克，葱，姜末，盐，味精，鸡精，胡粉适量，(胡粉也可不放）

    做法：将虾仁放在盒内，加少须酱油，盐，香油，味精，搅匀净放10分钟，猪肉放盒内放姜末，酱油，(可分3次加次加水或高汤，）搅匀，加盐，味精，鸡精，胡椒粉

 和水，水可分几次加入，一边加水，一边用筷子朝一个方向搅动，待肉馅搅稀，肉质起粘性时，再加第二次，以此类推，肉馅吸足水有黏性时再静放20分钟，将海参丁虾仁丁，放入搅好的肉馅中，搅匀后再放菜，最后放葱花，香油，和炒好的鸡蛋末搅拌均匀即克。

  此馅可以做水饺馅，包子馅，蒸饺馅，等。
